that was a historic moment after five and a half years of successful trading there – we now are looking forward to the opening of Quince!

Within a couple of days we had a gang of builders in there stripping out Amba and hacking it to pieces, preparing the space for what is going to be an incredible design and everything seems to be on track if not ahead of schedule.

They are so intensely focused on getting this project finished that they even worked on St. Patrick’s Day and on the Friday after St. Patrick’s Day which is unheard of!

150 at The May Fair With all the digging around it has been quite exhilarating and Silvena’s been getting extremely excited. We’ve been looking at her menus that are now coming together, the visuals for the website and for how the whole thing is going to look and feel.

I have to say that when I looked at the menus this morning which are now almost finalised, as a grown man I have to admit that I almost shed a tear – I cannot wait, I think I was salivating so much that I had to wipe my mouth! So as they say, all great things are worth waiting for so I’m sitting here pensively waiting for May to come along when we re-open Amba as Quince.

Everyone out there is going to absolutely love it – it’s going to be different and talking about different, as well as Quince we’ve found the space outside to develop a cigar room – something that we’ve just started on and will be part and parcel of the Quince experience where people can enjoy a really good Cuban cigar with a vintage Armagnac or Cognac.

So it’s all about experiences, it’s about luxury and guests will be able to enjoy those new spaces or whip across the building to 150 at The May Fair and enjoy a nice vintage Dom Perignon with some of Silvena’s tastings – you can’t get away from Silvena, put it that way! And if you want a really amazing night out you should have a look at the Chef’s table which is being developed in Quince with a special menu.

Now I’m beginning to plan for Los Angeles,where I’m going at the beginning of May for 10 days. I’ve warned Los Angeles that I’m on my way so I will bring you up to date on what happens out there.

    Me and my future wife (will be my wife hopefully on the 9th of April) will be spending our honeymoon at your hotel (from the 11th till the 19th of April), I have read and heard excellent reveiws about the May Fair; I really hope that it will be an enjoyable experience..would the restaurant be open by the time of our arrival?
